Heart-Healthy Chicken Stew for Cold Weather Wellness

Simplified Heart-Healthy Chicken Stew
Celebrating Heart Health Month with Nourishing Comfort Food


February is Heart Health Month, a great time to highlight recipes that support cardiovascular health while still being satisfying and simple. Whether you're serving your family or fueling up after a long day in uniform, this hearty chicken stew is a warm, nutrient-packed option that’s easy to prep and enjoy throughout the week.


Ingredients

 

  • 2 tablespoons olive oil
  • 1½ pounds boneless chicken thighs, cut into 1-inch pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1 teaspoon onion powder
  • 1 teaspoon turmeric
  • ½ teaspoon ground cumin
  • ½ teaspoon salt (plus more to taste)
  • ¼ teaspoon black pepper (plus more to taste)
  • 2 tablespoons all-purpose flour
  • 2 medium potatoes, peeled and cubed
  • 3½ cups chicken broth
  • ½ cup milk or cream
  • Optional: 2 cups chopped spinach

 

Instructions

 

  1. Season the chicken with salt and pepper. In a large pot, heat olive oil over medium-high heat and brown the chicken for 4–5 minutes. Remove and set aside.
  2. Reduce heat to medium. Add garlic, ginger, and onion powder. Stir and cook for about a minute.
  3. Return the chicken to the pot. Add flour, turmeric, cumin, salt, and pepper. Stir well.
  4. Add the cubed potatoes and chicken broth. Scrape any browned bits from the bottom of the pot.
  5. Bring to a simmer and cook uncovered for 25–30 minutes until the chicken and potatoes are tender.
  6. Stir in milk or cream, and add spinach if using. Cook for another 5 minutes. Taste and adjust seasoning.
  7. Serve warm. This stew stores well in the fridge or freezer for easy leftovers.
