Can you believe it’s already February? February is Heart Health Month, and a wonderful opportunity to focus on nutritious eating that supports heart health. In line with this, our National Guard Registered Dietitian, Heather Taylor, shares one of her favorite recipes. This heart-healthy chicken stew is perfect for nurturing your heart and also ideal for warming up during the chilly winter months.

Simplified Heart-Healthy Chicken Stew

 

Tailored to the fast-paced lifestyle of military service members and their families, this stew is a harmonious blend of health, convenience, and heartwarming flavors.

 

Ingredients:

 

  • 2 tablespoons olive oil
  • 1 1/2 pounds boneless chicken thighs, cut into 1-inch pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1 teaspoon onion powder
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste
  • 2 tablespoons all-purpose flour
  • 2 medium potatoes, peeled and cubed
  • 3 1/2 cups chicken broth
  • 1/2 cup milk or cream
  • Optional: 2 cups spinach, roughly chopped

 

Simplified Heart-Healthy Chicken StewInstructions:

 

  1. Season the chicken with salt and pepper. In a large pot, heat olive oil over medium-high heat and brown the chicken for 4-5 minutes. Remove and set aside.
  2. Reduce to medium heat. Add garlic powder, ginger powder, and onion powder, cooking for a minute.
  3. Return the chicken to the pot. Add flour, turmeric, cumin, salt, and pepper. Stir well.
  4. Add potatoes and chicken broth, scraping up any bits from the pot.
  5. Simmer for 25-30 minutes until chicken and potatoes are tender.
  6. Stir in milk or cream, and if using, spinach. Cook for another 5 minutes. Adjust seasoning as needed.
  7. Serve hot or store for later.
